Shallots first time

I am growing shallots from sets for the first time.

Planted out in early April and making good growth. This week flower buds are starting to appear, should they be removed so that all the energy is concentrated in the bulbs or left to mature?

    Your shallots are 'bolting' which, like onions, can be caused by cold wet weather followed by a dry hot period.  You are exactly right in suggesting that by removing the flower buds the plants will redirect their energy into daughter bulb (offset) production instead of into seeds, so you should still get up to a dozen new offsets from each original set.
