Tall hedges

Hi can anyone tell the the name of the tall hedges in Monty Don's garden? Monty talked about how to cut tall hedges in the programme aired on 23/8/13.
i am looking to dig out tall conifers and replace with a nice looking evergreen hedge that grows as tall as the conifers. The hedge in Monty's garden would be ideal, but open to other suggestions.
your help, advice and views would be greatly appreciated.

Its a beech hedge. Not evergreen but it does hold onto the dead leaves throughout the dormant season.

I thought it was hornbeam?
Think it is hornbeam - but that does the same as Matt says for beech, and holds its leaves in the winter.

Do you know if there are any other bushes that grow that tall that stay evergreen?
Laurel is evergreen and will grow tall. It would need regular but not frequent pruning to keep it in good shape. If neglected it will grow as wide as it gets tall.
Laurel will grow VERY tall....
A trimmed one on the left and more or less untrimmed at the end. In flower today. (Obviously!)
Oh my bad I always thought Monty had Beech hedges :P
Yew is an excellent tall hedging plant.
