Im not an avid lover of the beetroot but done this way I cant get enough. 8 medium beets cooked peeled then grated ( is easier) or finely cubed into a large bowl. In a saucepan dissolve 1 pint white wine vinegar with 1 pint sugar. bring to simmer and add enough gelatine according to packet and whisk, dissolving thoroughly, pour over the beets, mix well ,then ladle into containers. I use butter tubs. place in fridge till set.
Fabulous with salads, yummy.
With a Sunday roast ,as a must have add on. Peel and slice 1 red onion fry in 1 tablspn olive oil. till softened, add 2 heaped deserts spoons of sugar and 5- 6 of balsamic vinegar, season and add 3 medium roughly sliced cooked /peeled beets, add 1/4 chicken cube and a good splash of hot water, stir well. cook in open pan on low simmer till liquid is absorbed by half.
Adjust sugar and vinegar to taste, extremely moorish! be warned.
