dendrobium nobile care

I have one which has 3 large new stems.  Should I have cut the original stem back? If so is it safe to do so now?

    We stood all out orchids under the car port, in the shade, all summer and just sprayed them every few days.  They have done very well, with nearly all of them developing new flower spikes.  Most are 'normal' phalaenopsis type.  They clearly thrived despite us image
