I think with small kids it's important they have fun so having a mud pie corner where they can make a mess or building an insect hotel or letting them sow large seeds such as sunflower and nasturtium which they can handle easily as well as small seeds like cress that grow quickly so they can see results quickly. When it's warmer, sowing seeds like courgette or pumpkin may encourage them to try new veggies.
Then let them plant out their babies and help keep them weeded and watered and also monitor the insect hotel whatever for new lodgers.
