Sunflower Seeds

My sunflowers were huge this year and the heads have masses of seeds on them (they are still happily blowing around in the wind at the bottom of the garden). I would like to use some in the kitchen and save some for planting next year, what do I need to do?

It will take a long time to de-husk them all for kitchen use. For planting next year let them ripen completely. dry off and store them dry and cool
