Terry Wright, I cook my Bramleys to a pulp and freeze for apple crumbles, pies,sponge puddings etc in the winter and put up smaller amounts of apple sauce for pork dishes. Your acid apple sounds like a cooker so would be very suitable. To save space I put my pulp in icecream boxes to freeze, then put them into bags and re-use the box.
During this time you will probally see what looks like a hornet wandering around your indoors. It is a Queen wasp, looking to hibernate, do not kill it
If you want two good apple trees, I recommend - Spartan for eating and Howgate wonder for cooking ( although it is sweet enough to eat if you can manage a whole one ). Both store well.
