Ideas needed to cover unsightly soil bank!

Hi all, Having completed an extension on my house, garden is the last bit of work to be completed. I decided (although I might be regretting it now) to take out a raised area at the back of my garden. This has left a foot high soil bank with hedges on. My query is what plants could I plant at the base to house the soil bank? I'm a very inexperienced gardener so the easier to maintain the better. Thanks in advance. Louise.
