Empty Sunflower Seeds?

I cut a head off one of my Mongolian Sunflowers to collect its seeds. But most of them were just empty husks. Have a tried too early or am I just unlucky?

    The little flowers in the centre didn't get pollinated. Did you see bees on them?

    Like the secateurs. They are good aren't they? Rather symbolic in this photo, unfortunately.image

    Yes there were bees on them. Ill have a look at another flower an see what that's like.

    I can't see exactly from the photo, but empty husks either mean low pollination or the birds got there first! 

    The middle flowers are the last to develop and be pollinated.
