Pruning crab apple

Our crab apple is absolutely smothered in fruit and the birds will have a banquet later in the year. I obviously don't want to prune while the fruit is on it so when would be the best time to tidy it up. I do need to keep the overall spread under control.

Wintertime is the best time. A mild day while the tree is dormant.
So once the redstarts have cleared the tree and it's not too cold?
Just the time.
