@amancalledgeorge you may not value or want privacy, but plenty of people do. There is little privacy in the day to day world so what's wrong with people wanting some in their own back garden?
When I’m in my back garden, I don’t want to see my neighbours or any unsightly outbuildings. I don’t want them to see me either. This has been a strong influence on the placement and choice of plants in my garden😊! In my front garden, I don’t mind being sociable!
I think we'd need a bit of info on the size of the space before making any more detailed suggestions for the OP. I know some of the gardens round here wouldn't be big enough for a pergola or a big row of shrubs - there wouldn't be any room left for anything else!
I think attaching something to hold trellis could still be problematic @KT53 - it could be part of the fence, but I expect if both parties are happy , it wouldn't cause problems.
It's a place where beautiful isn't enough of a word....

My garden is directly overlooked by ten terraced houses - there is little vague sense of privacy - either visuals or sound. By the same token, I can look into their gardens too. I tend to think of the block of narrow gardens as "communal gardens", essentially, and that does help with my expectations and frustrations. Fairly early on I put in a large arch, which does help to give a "sense" of screening, even if people can still look down into the garden. It's not that I think anyone will stand and look or I worry about people being nosy; It's nice to have lunch in the garden and feel a sense of cosiness and not that we are eating in a park.
I've kind of designed one end of the garden so we that when we sit down around the table we are surrounded by green screens - climbing roses on trellises, espalier apples and large pots. The eating area feels slightly 'sunked' even if it isn't really. I chose espalier and climbing roses because the garden is north facing and only 3m wide, so I wanted to try and keep the light, while adding 'lacy florals'
I have a neighbour who has an 8' privet hedge all round but I can see everything (including the kitchen which has floor to ceiling glass doors) from my landing window. Years ago my OH was painting the back bedroom ceiling and found out another neighbour's daughter was sunbathing in the nude. They had high walls so probably thought they were screened. I'm on a corner but have low walls. Everything on show which includes weeds, poor pruning and undies on the line!
Someone I knew moved into a new house and let it all hang out in the garden, as committed nudists, despite the garden being fully overlooked. The police were called within five minutes of the reveal, much to the befuddlement and wide-eyed wonder of the nudists.

Absolutely! Cuts down on noise too, and voices carrying - you don't want to have to go indoors every time you want to speak in private. I don't really want the neighbours glancing over just as my boob falls out my bikini top either - the poor buggers. 🤣
I've got nothing to add that hasn't been suggested, but for a quick fix if you're waiting for things to grow, a trellis and some big leaf clematis would look good. If you have a bit of the garden where you always sit out, you could put up a little fence/arbour and some fast climbers, just for temporary privacy.
