    Yes, timing is all. The book (linked above) gives sowing calendar.

    I would put some sort of eyecatcher (sculpture, sundial etc) at the furthest point and frame a view so the eye is drawn to it, through the trees.

    Monty Don has fields around Long Meadow and has cut long vistas through hedges to the landscape beyond. Good to draw the surroundings into the garden.

    No, on the other side, at the far end of the paddock (a position that lines up with you eyeline from the patio). Then narrow the gap (where the fence is) with planting, framing the view of the 'eyecatcher' so it beckons you to explore the paddock or at least gives a sense of space reaching beyond your garden.
