@Fire has some good suggestions. Plastic tarp can be ordered online and it's fairly cheap. Weighed down with some bricks it could be used to smother some weeds and clear the ground with minimal physical effort. I chuck some on the empty veg bed if there's nothing overwintering. Weedkillers if you are happy to use them could reduce physical work too.
I use an app called Microsoft To Do. You can install it on your phone and make a to do list of jobs and tick them off as you go. I struggle with health problems too but I find it helps me think about what I can manage that day and ticking things off lets you see how much you've achieved too. I tend break things into very small tasks - put plant pots away, brush patio. I think it's very easy to feel overwhelmed but I agree, finding enjoyment is important, as is not doing too much all at once. Things should start to slow down too over the winter.
How to tackle a garden gone wild? I suffered an injury at the start of the year that put me out of action until now, and I have still got a long way to go... My geographically close friends aren't gardening types,
so I haven't got people I can ask for help.
I wanted to add, that it's a good question, faced by a lot of us. It's a hard position and sometimes there are no easy answers. Sending best wishes
