You can just take the flower buds off. If they have sideshoots without flowers - bit like you get with tomatoes,  you can use those though.
I've just done some - they're in the house with a plastic cover. I usually do them during summer but I didn't do any this year as the only surviving plant is quite hard to get at, so I took some from the newer plants I grew on from last year,  which are only just starting to flower.
As long as the part you cut is healthy, a decent length, and you trim at the correct points, they should root. Just put them round the edge of a pot with some free draining mix to grow in.  How well/quickly they take will just depend on where you put them, but they're usually very easy  :)
It's a place where beautiful isn't enough of a word....

I live in west central Scotland - not where that photo is...
  • Agree with @Fairygirl - if every single stem is flowering just choose one/several of a decent length for cuttings and remove the flowers/buds.
Alternatively, leave some heads to set seed and collect those for sowing.
In most instances, once you have them, you will always have them tho you may need to move any self seeders to where you want them to mature,
  • Thanks, haven’t had a garden for 6 years and cannot remember if I ever did this.
  • Thanks,I use a lot of Strulch on the borders so tend not to get too many self seeders hence the real need to get some plants for next year, will definitely collect some seeds.
