Last question about semi-dried tomatoes - promise

Do they benefit from storage? If yes, how long before I should open a jar?

    Can't really say.   I tend to save mine for winter when I want a summery snack to cheer me up on cold, grey days.  I also use them in spring and summer before the new season's toatoes are ready to eat.   Great for apéro with friends or a family snack.

    They do keep a long time unopened but, once opened, I keep the jar in the fridge if I don't use them at one serving.   Bring them out for an hour before serving again as they're best at room temperature.

    Thanks @Obelixx. Might make a nice pasta salad or puttanesca too.

    Yes, sometimes I use them for pasta or for fennel baked with goat's cheese, sun dried toms and pine nuts but I really like them served simply on bruschetta.

  • Just as an aside, if you have a glut of tomatoes and dont have time to semi-dry them or make into sauce/bottle to keep, you can pack tomatoes whole into freezer bags.  When you want to use them, take out a handful and the great trick is that if you put them under the tap while they are frozen and give them a light rub the skins slip off.  Then just chuck the frozen marbles into soups or stews or sauces. Have done this for years.

    I don't have the space to freeze tomatoes after freezing plums, apricots, walnuts and blackberries so I boil them down to make puree/passata.

    We had loads of cherrytomatoes in a panzanella salad last night.  Delish, and there's enough left ripening to make another in the week and then I think they'll be done.   Mix of red pear, yellow pear and black somethings so colourful too.
