Apple Pruning Help

Hello,
I have an apple tree that I had in a container for about 6 or so years before planting it in the ground about 3 years ago. It seems to love where it is and we have had a bumper crop of apples this year, having never previously given much fruit.
I am keen to prune it so that it grows into a nice shape that is effective and continues to thrive.
Can anyone suggest how I should run this and when I should do it please? I've read a lot on the topic but of course there is never an example of a tree that has grown like this and I really want to get it right to help the tree.


I also have a mature apple tree that I inherited about 6 years ago when I moved. Every year around Dec/Jan I end up cutting all the water shoots. I'm pretty sure there is a more proactive way to do this throughout the year but I worry I'll remove the wrong shoots. Is there any advice to doing this please?
