Potato gas

Does anyone know what gas is given off when scraping new potatoes?  This happens to me every year when scraping new potatoes for cooking.  Always makes me cough, never hsppens when peeling old potatoes.  And no, it is not an allergic reaction to nightshades.  Just wondering ...

    We just wash new ones and leave the skins on.
    Funny what can make us have reactions.
    I do not think it could be any kind of gas as such?
    But maybe the fine mist of the juice. Is scraping different from peeling?
    I know peeling gives off a kind of fine watery spray.
    Not sure . I used to sometimes "rub" off the skin of new ones, not scrape as such.

    I cannot stand the eye watering effect of ordinary pale onions. It "sets me off" badly.

    But red ones do not affect me at all. Go figure.
