Having purchased this rosemary plant it came with a long stalk. Do I need to cut this to allow bushier growth or just leave?

The more top growth you take off the bushier it will become.
I'd cut it back to about the same height as the other stems.
You can use the bit you chop off in the kitchen, or put it in a pot of gritty compost and it'll root in no time.
