Potato Help

I have just harvested some cara pototoes. Im new to growing fruit and veg but im wondering if someone can advise on the markings on these potatoes. I think they look ok to eat but it looks like the flesh is exposed with small pink markings. i would appreciate any feedback. Thank you

    They look like splits due to a lot of water. Peeled they will be fine to eat.

    There's a growing movement today of retailers selling what they call imperfect fruit and vegetables and why not, fruit and veg will taste just as good whether it is misshapen or a bit damaged as long as the damage hasn't led to the item rotting that is, I was thinking the other day that a good deal of what I grow would come under the description of imperfect but never the less these imperfect fruit and veg taste better than most of the perfect ones bought in the supermarket. My advice to anyone starting out growing their own is to hope for perfect looking produce but except the imperfect all the same, those spuds look pretty perfect to me so well done.

    I think you'll find many varieties will display some discolouration in the area where the next year's shoots will sprout.  I find it happening in Kestrel where the colour changes to purple but they're still delicious.

    That's what that variety looks like, they have purple eyes, they have not split and there is nothing wrong with them. congratulations on some nice looking spuds.
