There are lots of plants that root in water,  you may like to have a look through this thread,  there are several.

Are you trying to root plants in water or grow mature plants hydroponically?

If you are going for mature plants, there is now a fad for growing plants in Leca (hydroleca) and it certainly works for some things such as rhaphodophora. There are lots of tutorials on YouTube where you will find a lot of very overenthusiastic people trumpeting the advantages or this hydroponic wonder. Just google something like "growing in Leca" to find the videos.
If you are just rooting plants in water, it can be a hit and miss job. Some things take to it like ducks to hydroponics but others rot. The key is to not have any leaves under the surface of the water as they start to rot and make the water disgusting. Don't leave the plants in sunlight, a north facing windowsill is best, and be patient though sometimes plants just never co-operate and stay like an everlasting posy with not a root to be seen.
