Does anybody dry fruit or vegetables in an ordinary oven?

    I’ve got a dehydration setting on the air fryer. Not sure how long it takes. Not sure what I’d want to dehydrate though. Presumably the fibre content of the fruit or veg would stay the same, but the sugar content by weight would be increased, and worse for teeth than the fresh fruit? Only dried fruit I use are apricots, prunes and sultanas/ raisins, and I don’t grow any of those. Can you dry cherry tomatoes but not store them in oil?

    I bottle fruit but not veg. I have looked into drying veg and then doing as others have said but became nervous about possible problems with the keeping so resort to freezing and/or chutneys.

    I don't like very dried tomatoes so only half dry then bottle in oil.

    I used to dry chillies by threading through their stalks and hanging them in rows in a window but now I just freeze them whole or chopped and stashed in ice cube trays.

    I freeze broad beans and shelled walnuts and make jams, jellies or chutneys with other fruit and veg.

    I did pears in my oven last year, it works fine. I set it to 50C and left the door open, it did take 3 nights and I did have to keep moving the shelves around

    That depends on the price of your electric! It produced very nice dried pears which I ate within a few days, I would probably need to dehydrate an entire orchard to keep any for more than a week. I now have a huge dehydrator so I'll be trying again and see if I can keep any!
