Apple trees not doing well



I have a Starline Garden Fountain apple tree, it was quite happy but not many of the branches and leaves appear to be withering. On examination, it looks like something (perhaps a squirrel) has damaged part of the trunk, and branches below the point of damage/scratching are doing well. Appreciate any advice on whether I should be cutting the tree to the point of the damage (and if so if I should wait until winter/dormant season), or if I should just leave it.
I also have a Redsleeves apple tree, was doing fine and got lovely apple blossom but now leaves seem withering and almost like they've been sunburnt although all other trees are fine, not sure what is wrong and any pointers would be much appreciated.
