    If you cook them at a high enough temperature, the chips will no longer function and they will be relatively safe to eat.

    Fine by me but Possum knows I cook them in the oven and there lies the horror. 

    I really don't like the smell of a deep fat frier so I only do "proper" ones about once a year.   Must admit I do like the butterflied chips we've found in two restaurants here - sort of winged so extra crispiness.
    Vendée - 20kms from Atlantic coast.

    Chips with salt and vinegar and crispy bits at the bottom of the bag eaten walking along the seafront is the only way
