Are my Olive trees beyond saving??

Does anyone here have experience of growing Olive Trees? Specifically rescuing them ...
I have two large Olive trees in pots which took a really bad hit this winter despite protection (the plants were fleeced, pots wrapped during the prolonged cold snap). The branches on one tree are green and showing signs of life. On the tree pictured the branches are all completely brown and brittle. However, there are some sprouts growing around the base in both pots (see 2nd pic). Does this mean the main tree is dead or is there any chance some new growth might develop on the trunk? Not sure whether to give it a hard prune? Or should I give up on these trees and replace?
Any words of wisdom greatly appreciated. Thanks in advance ...
