Formative pruning of fruit trees

Hi everyone
I have two (bush) fruit trees - apple and a peach - both now 3yo . I planted them after they had had their 2nd year prune, and I failed to do the 3rd year formative prune them over winter (for the apple) and early spring (for the peach) - I too scared, but now I regret it. I've also got a 2yo crabapple which came as a feathered maiden and has since branched out a bit.
Can I do the peach now, in late Spring? It's planted in the ground and grew quite well last year, though now it's got a fair amount of peach leaf curl. It's supposed to be resistant so hopefully it won't suffer too badly. It's finished flowering.
Can I also do the apple, or is it better to wait until next winter? It's currently in flower and looking healthy.
Finally, am I right in thinking I just leave the crabapple alone to grow how it wants?
