Olive pruning

I know nothing of olives but I’ve recently ended up with a small lollipop one. I want to prune it to encourage a more natural growth pattern. Is it the same as native trees where pruning the vertical stem will encouraging branching?

    That's what I do; just cut out the top.  It will never make as good a lollipop as a bay.  Much larger, relaxed and open.  But one has to go with the flow.
