Consider Rhamnus alaternus 'Argenteovariegata' ; one of the best variegated shrubs available .
    Benefits from red-berries too ! ;)

Just wanted to give an update on this.

I took out the pittosporum yesterday and realised the star jasmine leaves behind it had died off behind the plant (not surprisingly). It had full leaf cover before, but that was when the pittosporum was smaller and had more sparse foliage.

I’ve decided not to put in anything for now — but thanks for all your suggestions — to let the star jasmine recover and see how the rest of the plants grow.

Will the star jasmine generate new leaves in the bald spot? I will mulch and fertilize with fish, blood and bone.

A further update — we got a stainless steel ball to cover the bald spot on the star jasmine, and the plant has grown new shoots around it
