Lopsided apple tree

Hi! We have a very old established apple tree, producing amazing apples in abundance every year. It’s now very lopsided. The blossom is just beginning to show now. Is it safe to lop a couple of branches off at this stage? Any advice,please?

    I would say go ahead after the blossom.  No technical reason but just to enjoy the sight and smell of the blossom.  But a with a pic I could be more helpful.
