Mouse/vole damage to yucca plants

As the snow melted I noticed most of my yucca plants were pretty flat, and I thought it was due to the weight of the snow.  Now that they're completely exposed, I can see that mice or voles chewed off most if not all of the leaves on the majority of my plants.  Will the plants produce new leaves, or are they probably dead at this point?

It looks to me more the yucca(s) died and the centre (center) rotted.  The mice probably came later.

  • They were all healthy back in January, and there are still some that look fine.  Do you think the extreme cold would have killed them?  These were planted by my mother probably 30 or more years ago, but transplanted within the last 4 years.  Others planted around the yard have no damage at all.

More likely than mice/voles in my opinion.
