Carrot, beetroot and pea first timer

I've never grown these from seed before and need some guidance please. Thought the children would enjoy sowing these in trays, but I don't know which are suitable for this (i.e. if some just get sown straight outside when the weather warms up a bit) and at what time to start each. Last year we very successfully grew peas but these were bought as small plants from the gardening centre. Any help would be appreciated on how to start these three veg from seed.

This was kindly put on another thread by @Plantminded.
You can get them with different sizes of cells .
The modules are basically a set of individual 'pots' joined together, usually 6 or 8, so yes - ideal for one or two seeds normally, although not exclusively.
