questions about planting bare root fruit bushes

I took delivery of bare root raspberries and a blackcurrant this morning. Consensus seems to be to add well rotted manure to the planting hole. I have some garden centre bagged stuff that was probably bought at least 6 months ago. Do I need to cover it with soil or can the bare roots go straight on it? 
Secondly how deep should the hole be?
And finally, if I can't do it today, is it enough to put the plants in a tub with compost covered the roots (and should I not soak the roots first if I do this?) And if this is ok, how long would it be ok to leave them thus?
