How about one or two large pebbles to fill in the gap @WimbledonBex?

I think it looks great as it is, lovely old slightly wonky stone wall, framed by a neat and tidy trellis.
It could look very awkward if you put anything in to fudge the transition - it could end up being like a big red arrow pointing to it as a problem, whereas as it is, it looks confident, intentional and neat.
It could be a good idea to fill in the missing coping for the benefit of the wall, though it'll be difficult to match in what's there, and it's bound to look a bit shouty at first. If doing that, I'd be careful to follow the line of the existing coping, and not be tempted to have the idea to fill in the gap between the wall and the trellis, because that could look wierd.
Are you going to grow anything on the trellis?

It looks fine to me. If you had some containers with something like standard bay 'lollipops' that would distract the eye from the trellis. But it's not too bothersome in any case.
