Brown patches inside quince fruit

I’ve had a good harvest of quinces from my two quince trees but when I cut into them, they have large areas of brown inside. This doesn’t look right. I am hoping to make quince jelly so should I use these quinces or not? Most of the fruit are affected.

    Yes you should. This happens to our quinces every year and we use the fruit to make quince jam. spiced quinces and membrillo. This year we have had from 2 trees (different varieities) such a harvest that I have also started 2 demijons of wine.
    When you cut top and bottom and then peel and quarter and pith, cut the quinces and put them into lemon juice water . This will stop the browning continuing. When you do the jelly (very time consuming but such a treat at the end) the browning will go and you will have a superb pink colour.

    ps you can also bake them once they are peeled etc. Lovely.
  • Thanks for your kind and swift response. We cut out the brown bits and juiced the rest 😱 We’ll know better next year, thanks to your wise advice. 
  • I lost most of my quince blossom to the Spring storms so only had one mature quince on the entire tree. That was blown off last week, still bright green, I haven't found it yet amonst the long grass.
