Thistle foliage turns white.

Just wondering if anyone knows why the new growth on thistles after a wasteland fire is a creamy white.

    I've never understood that, every year there are some on the land just outside my garden. No fire there so can't be the only cause

    I think it is caused by some sort of infection but I have only seen it later in the year. Thistles can be variegated too but it doesn't look the same to me. The part of the leaf that is affected may not grow in the same way? 
    I have worked as a Gardener for 24 years. My latest garden is a new build garden on heavy clay.
