Preparing for winter

Hiya, i'm a newbie to gardening and love it. just had a very successful spring and summer with all grown from seed. i have a few questions which i cant seem to find answers to on the internet about winter preparation.
- i have osteosperum in pots, what and when should i be doing to them
- i know roses are fine kept outside
- also holly hocks in pots??
- Dahlia in pots?
