Pruning fruit trees

Can anyone advise me as to any pruning I should be doing to my fruit trees? I put them in about 18 months ago intending for them to be fan trees, but they've kind of shot up this year and aren't really fans. I have trimmed off branches that were facing out, but there are lots of side branches I've tied in especially on the peach and I'm wondering if I should be shortening any, or removing some?
