Chillies - only 1 plant, what t do with just a few??

  • I too was going to suggest freezing them as they become ripe.  A few other ideas:
    - prick a chilli with a toothpick then put it into a bottle of vodka.  Chilli vodka in a month or so
    - Prick a chilli and add to a bottle of oil to use in cooking.  Garlic/rosemary etc can be added too
    - Blitz with onions, oil, garlic, paprika etc for a peri peri marinade/coating for chicken
    - If you have apples, you can boil them for the pectin to make chilli jam. Otherwise just use jam sugar or shop bought pectin

    My recipe for chilli jam has a bit more going on and is great with grilled or BBQ'd belly pork and sausages, chicken, burgers and in ham butties.   Good with grilled veggies such as courgettes too.

    Don't forget tosave some seed for swoing next year when you clean your chillies.

    Sweet chili jam with garlic and ginger

    225g               chilli peppers

    400g               red bell pepper - cleaned, deseeded and roughly chopped
    600g               onion - chopped
    400g tin        chopped tomatoes
    1.5kg             sugar
    750ml                        white/red wine vinegar (cider vinegar is also good)
    50g                 ginger
    1 head           garlic - cloves peeled
    1 tbs               sea salt

    Add the cleaned and prepared chillies, peppers, onions, garlic and ginger to a large pan with the vinegar and salt and blend with a hand blender (or in an electric blender before putting in the pan if you don't have one) until well mixed together - keep your eyes out of the way as any splashes would be very painful!

    Add the sugar, stir with a wooden spoon and bring to a rolling boil for about 45-60 minutes until thickened and the wooden spoon leaves a trail when stirred in the bottom on the pan.   Skim off any 'scum' that rises to the surface.

  • I have a recipe for Pineapple and Chilli sauce which I am very tempted to try out this year. My chilies are in a transitional stage at the moment, they are turning from green to black and I assume, will then turn red. I have just moved the plant into a shaded corner as it was starting to suffer leaf scorch.
