Scabiosa ochroleuca is a really good one. Numerous small pale yellow bobbles on wiry stems late summer into autumn, the plant itself is fairly insubstantial, mixes in with other perennials which can give it support. There's a dwarf version called 'Moondance' but you lose the ethereal 'floatiness' of the species.
Persicaria 'JS Misty Morning', which I have my Scabiosa with, is an extremely muted shade of pink - sorry it's hard not to mention pink flowers in a thread on muted colours!
Aster 'Monch' is a fairly muted shade of mauve I suppose. Aster 'Primrose Path' has sprays of smaller, paler flowers.

A couple of people have mentioned corepsis Moonbeam which I already have but it seems to be coming out a very bright (albeit light) yellow so it doesn't really fit 😕
