How to store / dry sunflower seeds

Hi
I am collecting some of my finished sunflower heads (leaving some in situ for the wildlife to eat) and I don’t know how to store these safely from mice in my greenhouse or garage, without their going mouldy in a box. Any suggestions?

    Once the heads are dry, pick the seeds off and put them in a sealed container and keep them somewhere cool and dry ( so not in the GH ). 
    If they are nearly ripe but you need/want to remove the heads, put the whole head in a paper bag and place them somewhere warm and dry - an airing cupboard will do - and once dry, keep them stored as described above.
    The 1st method is the best one  :)
