Very impressive setup - I hope it works really well for you. I'm not sure I'd water on a daily basis though. Presumably it will be little and often (which ticks the consistency box). The top of the compost will be moist but I'd be concerned that deeper down it's going to be quite dry thereby keeping the roots near the surface rather then them going deep to search out water and nutrients as they should. At the moment my plants in the g/h are about 4ft with good trusses developing. I give them a soak once a week and a feed once every 10ish days. If it's really hot and sunny at most I'll water every other day, but that's quite rare.
