Fruit tree resuscitation

I inherited a butchered fruit tree with a new house in 2018. I always assumed it was apple but I know someone who insists it’s plum. Either way I’ve included a photo of the leaf. About 18 months ago it snapped so I cut it down with the hope that coppicing would rejuvenate it. It has to an extent but now I’m not sure as to the best way to prune or when to do best by the tree. Photos are of it before I cut it and then today. There’s a lot of spindly shoots which I feel I should prune.

    Looking at the  before pictures, I think it has had it.  The shoots coming up are probably below the graft .  I would  dig it out and if you want an apple tree, buy a new one in the autumn.
  • I just want it to live. It flowers a dim happy with it as a pollinator resource but only if I can get it back to being tree-ish rather than bolting everywhere. Not too fussed about fruit, great if possible.
