Hi,
My Cordyline is sprouting "feathery" type branches from the top. Is this normal and do I trim them or leave them? Advice would be appreciated thanks

You can leave it to flower and set seed, or cut the flower off at any time.  The flowers have a sweet scent, some like it, others don't!
