Thank you everyone for your valuable insights! I have bought a decent weed killer (given I have no grass that I'm worried about killing) and have today sprayed the entire area with it. Here's to hoping the weather stays nice and the rain stays away!
Once it has taken affect I will as recommended remove as much of the remains as possible and work at digging the surface over! I have bought a good digging fork and a shovel!!
It will certainly need leveling and I am in the end looking to have: a new fence installed, paving or gravel on the bottom level (budget depending) and a retaining wall between levels so it doesn't look such a mess! I will likely need to hire professional help at that stage!!

Hope you get om ok with it @michael.l.saulqNMtqjFj. It can be a bit daunting when you're faced with that kind of thing, but once the weeds all die back, and you're able to dig over etc, it'll soon start to look better The bit of hard landscaping sorted will really help too.
It's a place where beautiful isn't enough of a word....
