Reading more about lovage made me think it can make a great masking plant companion if I put it right next to dahlia. Doubly excited to try that against our deer
I know you have Thyme already, but one of my favourites is Lemon Thyme as it is a perfect accompaniment to chicken/fish/roast veg. It brings the taste of lemon and herb stuffing to a dish. (Lemon basil is also fantastic (in pasta or a salad) but you mentioned no basils).
Not herbs, but ‘micro greens’ can be fantastic in salads - try rocket, spinach or kale grown from seed and harvested as baby leaves for flavour punch.
