It is never a good idea to cut a lawn too short.
I have worked as a Gardener for 24 years. My latest garden is a new build garden on heavy clay.

And don’t have it too long as you may end up with leatherjackets (if they exist in Dallas, Texas).

Depends on the variety of grass.
Skunk will get you very high.

How you recommend me the grass size, is it small, medium or large.

I use about the middle setting on my mower, but the two most important things are don't cut it so short that the roots are exposed, and don't cut lots off in one go. Little but often is best. Some people say let it get a bit longer in drought conditions but mine pretty much stops growing if we have a drought.
Doncaster, South Yorkshire. Soil type: sandy, well-drained
