Pruning apple trees

Wondering if anyone could advise please. We moved into our house a few years ago and last winter I pruned the apple trees for the first time. They had been neglected for a while so I pruned a fair amount out of necessity just to see what we had really. But I’m wondering if I should prune now given they are somewhat trained, and if I prune now how much I should prune. My plan was to give a light prune to remove dead, damaged and crossing stems, and take off new growth at the top - as we can’t really get to any fruit without a step ladder. There are seven trees here, a mix of eaters and cookers. Any ideas would be most appreciated. Thank you.
