Deep roots

Hi, We are renovating a old Victorian property and have ripped out 50 years over matted over growth, but the more we dig out the more matted roots we find (see photo) also around the area we are building a retainer wall so stuck on what to do about all the roots? Do we have to just keep digging?!
Thanks!

It depends on what you've been digging out.  :)
It's a place where beautiful isn't enough of a word....

They are just matted roots from years and years of plants and weeds, Ivy and all sorts!!!
    Thanks!

Some stuff will regrow from roots left in the ground, and some won't. It's impossible to be more accurate than that.
If anything regrows, you'd need to use an appropriate weedkiller. They'll only work effectively when there's grow to work on, so you'd really need to wait until spring/summer. Until then, you'll have to keep digging out and see what happens.

The wall should be fine - assuming you're doing it correctly. It'll also depend on the height etc, and whether you're raising the soil level by a considerable amount or keeping it the same as it is just now.
