Topiary

I’d like to shape a holly bush but all the experts say you should trim twice a year, in late winter and late summer. Won’t this trim off flower buds and therefore prevent berries from forming?

It would depend on the variety, and it's current size, but mainly on how you wish to topiarise/shape it  :)
Inevitably, you will sacrifice some flowering and fruiting if you're pruning in any way, but that's how it is, if you want topiary of any kind  :)
It's a place where beautiful isn't enough of a word....
