Mine's still in the ground Braidman. Well, it's a compost bin actually. Just taken this. A bit windblown after the wind last week but still looking good.
We've one in the greenhouse in a bag - pretty healthy, just flowering, and one in the ground outside - larger plant. Probably harvest them in a month or two...
Ours are looking huge and healthy, the best they have ever been. We'll wait until they've had a few frosts, as that is supposed to increase the sweetness, and we are giving them a weekly liquid feed until we crop them.
This is my effort with one root but more to dig up. Not as big as I thought they would be and not tried eating yet. Will report back with my thoughts about taste. I'm assuming that the knobbly roots at the front are the ones for saving for growing next year.
I got good sized tubers the one time I grew them, the taste was very mild, slightly sweet and a bit resinous like the smell of a dahlia. They didn't manage to overwinter in with my dahlias so I didn't bother again.
Our plants were the biggest they have been this year. About 4 feet tall. The crop was good, with some very large tubers, I didn't manage to get photos before we stored them in the garage. We have only eaten one, and it was almost tasteless, but that usually improves the more the longer they are stored, however they lose their crunch and are a bit squidgy. This is the largest size tuber we get.
The taste is always very subtle, so we only put a very light dressing on them, if eating them raw. Anything else would overpower their delicate flavour.
I had salad for tea despite the weather so made a slaw of grated yacon, grated apple, a few raisins and a drizzle of dressing. I was ok but perhaps a bit sweet so carrot might have been better than apple. I think I'll try roasting the rest tomorrow and then decide if I'll grow them again.
