If they only had two leaves on them, you've taken off the seed leaves, or you've taken off the first proper leaves. I think you've allowed them to grow under conditions that are far too warm if they were that size, yet only had two leaves. They sound as if they've been very etiolated and drawn [ie stretching for light]
It should take around two weeks for them to germinate. They shouldn't be cossetted in any way. Just protected from the worst of rough weather over winter. In much colder areas it's better to wait until spring to sow.
It's a place where beautiful isn't enough of a word....
